For example, using the Tier V 109 E that has 3 different caliber guns.
2x 7.92 = 60 damage per sec / 20 sec overheat
2x 20 mm = 134 damage per sec / 4 sec overheat
15 mm = 80 damage per sec / 5 sec overheat
Now we math it with 20 secs (to make the math easier) of shooting time. Also this does not count range since we all know the 7.62 mm has less range than the 20 mm and 15 mm. So this is math at 440m or less for maximum damage on all guns.
So lets break this down with 20 secs shooting time with these intervals:
All guns - 4 sec shoot, 4 sec cool down
All guns - 2 sec shoot, 2 sec cool down
All guns - 4 sec shoot initial, 2 sec cool down, 2 sec shoot
Separate fire groups - Full fire for 4 secs, shoot each caliber as they come of cool down.

So with the math, you will get more DPS with separate fire groups.
Now this is if you actually get a full 20 secs to shoot your guns at 1 target. We all know that most of the time you be lucky to get 3-4 secs on an evasive target.
Separating the Fire Groups also lets you shoot the weapons that are only required for that range. For example with the 109E 7.62 mm is 440 m, 20 mm is 600 m, 15 mm is 620 m for full damage. but up to 775 the 15 mm will still do under 80 damage per sec. So if a plane is 700 m away why force heat on the 7.62 mm and 20 mm when you do not need to.
